Waffle Batter

Dry ingredients
In a large bowl, whisk together flour, sugar, baking powder, and salt.

Combine
Pour the wet ingredients into the dry ingredients and whisk until just combined; small lumps are fine.

Rest and preheat
Let batter rest 5 minutes while you preheat the waffle iron.
Chilaquiles Potatoes

Brown potatoes
Heat olive oil in a large skillet over medium heat. Add potatoes and sauté until they begin to brown and soften, about 8-10 minutes.

Finish with sauce
Stir in salsa verde and vegetable stock; simmer until potatoes are tender and sauce thickens, about 6-8 minutes.

Tortilla chips
Stir in crushed tortilla chips and cilantro. Season with salt and pepper to taste, then remove from heat.

In a small pot, warm olive oil over medium heat and toast cumin, chili powder, and garlic powder for about 30 seconds.

Add beans and stir to combine. If too thick, add a tablespoon or two of water; simmer 5-7 minutes until heated through.

Season with salt to taste and finish with lime juice.
