Toppings and Serve

Method

Waffle Batter

  1. 1

    Dry ingredients

In a large bowl, whisk together flour, sugar, baking powder, and salt.

  2. 2

    Wet ingredients

In a separate bowl, whisk eggs, milk, melted butter, and vanilla until smooth.

  3. 3

    Combine

Pour the wet ingredients into the dry ingredients and whisk until just combined; small lumps are fine.

  4. 4

    Rest and preheat

Let batter rest 5 minutes while you preheat the waffle iron.

Chilaquiles Potatoes

  1. 5

    Brown potatoes

Heat olive oil in a large skillet over medium heat. Add potatoes and sauté until they begin to brown and soften, about 8-10 minutes.

  2. 6

    Add aromatics

Add onion and cook until translucent, about 3-4 minutes. Add garlic and cook 30 seconds.

  3. 7

    Finish with sauce

Stir in salsa verde and vegetable stock; simmer until potatoes are tender and sauce thickens, about 6-8 minutes.

  4. 8

    Tortilla chips

Stir in crushed tortilla chips and cilantro. Season with salt and pepper to taste, then remove from heat.

Beans

  1. 9

    Spice base

In a small pot, warm olive oil over medium heat and toast cumin, chili powder, and garlic powder for about 30 seconds.

  2. 10

    Beans

Add beans and stir to combine. If too thick, add a tablespoon or two of water; simmer 5-7 minutes until heated through.

  3. 11

    Finish

Season with salt to taste and finish with lime juice.

Toppings and Serve

  1. 12

    Toppings prep

Melt butter in a small skillet and keep warm for serving. Warm maple syrup if desired.

  2. 13

    Optional berries

Rinse berries if using and set aside.

Assembly and Serving

  1. 14

Cook waffles in a hot waffle iron according to the manufacturer's instructions until golden and crisp.

  2. 15

Plate each serving with a waffle, a portion of chilaquiles potatoes, and a scoop of beans on the side.

  3. 16

Top the waffle with butter and drizzle with maple syrup. Garnish with berries or cilantro as desired. Serve immediately.
