    Prep ingredients

    Drain and pat dry the tofu, then cut into 1-inch cubes. Peel and devein the shrimp if needed; mince the garlic and ginger; finely chop the onion; set aside.

    Sauté aromatics

    Heat the neutral oil in a large pot over medium heat. Add the onion, garlic, and ginger; sauté until the onion is translucent and fragrant, about 3-4 minutes.

    Brown ground chicken

    Add ground chicken to the pot. Break it up with a spoon and cook until no longer pink and lightly browned, about 5-6 minutes.

    Create broth base

    Pour in the chicken broth and water. Stir in soy sauce and oyster sauce. Bring the mixture to a gentle simmer.

    Add tofu

    Gently add the cubed tofu to the simmering broth. Let it warm through for about 5 minutes without breaking the cubes.

    Cook shrimp

    Add the shrimp to the pot and simmer until they are pink and just cooked through, about 2-3 minutes. Do not overcook.

    Thicken soup

    In a small bowl, whisk the cornstarch with the 2 tablespoons of water to make a slurry. Stir the slurry into the soup and simmer for 1-2 minutes to thicken slightly.

    Season

    Stir in the sesame oil. Season with salt and white pepper to taste.

    Finish and serve

    Ladle soup into bowls and garnish with sliced green onions. Serve hot.
