Prepare the filling
In a large mixing bowl, combine ground pork, finely chopped water chestnuts, green onions, minced garlic, minced shallot, egg, soy sauce, fish sauce, sesame oil, white pepper, and cornstarch. Mix just until evenly combined; avoid overworking the meat. Cover and refrigerate for 15 minutes to let flavors meld.

Wrap the wontons
Place a wonton wrapper on your work surface. Wet the edges with a small amount of water. Place about 1 teaspoon of filling in the center. Fold to seal, forming a triangle or square, and press edges firmly to ensure a tight seal. Repeat with remaining wrappers.

Rest
Let the formed wontons rest on a lightly floured tray for about 5 minutes to prevent sticking.
Cooking and Serving

Steam method
Line a bamboo or metal steamer with parchment or cabbage leaves. Arrange wontons in a single layer, spaced apart. Steam over simmering water for 6-8 minutes, until the pork is cooked through and the wrappers are translucent.
