Prepare the pork
Slice pork into even 1/4-inch (0.6 cm) thick slices to allow quick cooking and even marination.

Make the marinade
In a large bowl, whisk together minced garlic, grated ginger, minced lemongrass, fish sauce, soy sauce, brown sugar, lime juice, rice vinegar, white pepper, and sesame oil.

Marinate the pork
Add the sliced pork to the marinade, tossing to coat evenly. Cover and refrigerate for 45-60 minutes to let flavors infuse and tenderize.

Rest the meat
Transfer grilled pork to a cutting board and let rest 3-5 minutes before serving to retain juices.

Make dipping sauce
In a small bowl, whisk lime juice, fish sauce, sugar, and rice vinegar until the sugar dissolves.

Stir in thinly sliced Thai chilies and minced garlic. Add water to adjust consistency if needed; taste and adjust sweetness or salt as desired.

Spread lettuce leaves on a serving platter. Slice the grilled pork and arrange on top of the lettuce or offer as lettuce wraps.
