Prep the greens and aromatics
Rinse the spinach thoroughly and dry. Trim stems if needed and roughly chop large leaves. Mince the garlic. Gather soy sauce, water, chili flakes, sesame oil, salt, and sesame seeds.

Heat the oil
In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat until shimmering.

Add minced garlic and chili flakes to the hot oil. Sauté for 30-45 seconds until fragrant, taking care not to burn the garlic.

Stir in soy sauce and 2 tablespoons water to coat the greens evenly. Cook for another 1-2 minutes to meld flavors.

Finish with sesame oil. Taste and adjust with salt if needed; remove from heat once the greens are tender but still bright.
