1. Prepare the rice
Rinse the glutinous rice in cold water until the water runs clear. Drain and soak in clean water for 120 minutes to soften the grains.
2. Steam the rice
Meanwhile, fill a steamer pot with 2 cups of water and bring to a boil. Drain the soaked rice and transfer to a lined steamer basket. Steam for 20–25 minutes until tender and translucent.
3. Make coconut sauce
In a small saucepan over low heat, whisk together coconut milk, sugar, and salt. Warm gently until the sugar dissolves completely. Do not let the mixture boil.
4. Combine rice with coconut
Once the rice is tender, transfer it to a warm serving bowl. Pour the warm coconut sauce over the rice and fold gently to coat each grain. Let the mixture rest for 10 minutes to allow absorption.
5. Assemble bowls
Divide the coconut-coated sticky rice into serving bowls. Top each portion with equal amounts of durian flesh, distributing evenly. If any coconut sauce remains, drizzle it over the top.
6. Garnish and serve
Sprinkle toasted sesame seeds over the durian-topped rice and serve warm or at room temperature depending on preference.
