Bar Favorites - Steak

    Take steaks out of the fridge 20-30 minutes before cooking to come to room temperature.

    Pat steaks dry with paper towels. Evenly sprinkle 2 tsp kosher salt and 1 tsp black pepper on both sides.

    Preheat pan and oil

    Place a heavy skillet (cast iron preferred) over high heat. Add 2 tbsp neutral oil and let it shimmer.

    Sear steaks

    Carefully place steaks in hot skillet. Sear without moving for 2-3 minutes per side until a deep crust forms.

    Butter finish

    Reduce heat slightly. Add 1 tbsp unsalted butter to the pan and tilt to baste the steaks for 1-2 minutes.

    Rest

    Transfer steaks to a plate or cutting board and rest for 5-10 minutes before serving.

    Prepare potatoes

    Scrub potatoes and cut into evenly sized sticks (about 1/4 to 1/2 inch thick).

    Rinse and dry

    Rinse cut potatoes in cold water to remove excess starch, then dry thoroughly with towels.

    First fry

    Heat vegetable oil to 325°F (165°C). Fry potatoes in batches until pale and tender, about 4-6 minutes. Remove and drain.

    Second fry

    Increase oil temperature to 375°F (190°C). Fry in batches until deep golden and crisp, about 2-4 minutes. Drain on paper towels.

    Season and garnish

    While hot, sprinkle with 1 tsp kosher salt. Toss with chopped parsley for garnish if using.
