    Prep and separate rice

    Spread the cold cooked jasmine rice on a tray and fluff with a fork to separate clumps; beat eggs in a small bowl and set aside.

    Scramble eggs

    Heat 1 tablespoon oil in a large wok or skillet over high heat. Pour in the eggs and scramble until just set. Transfer to a plate and set aside.

    Cook aromatics

    Add remaining oil to the wok. Add minced garlic and diced onion; stir-fry 30–45 seconds until fragrant and the onion starts to soften.

    Stir-fry vegetables

    Add bell pepper, carrot, green peas, and fresh green chili. Stir-fry 2–3 minutes until vegetables are crisp-tender.

    Add rice and mix

    Add the separated rice to the wok. Break up any remaining clumps and toss with the vegetables until evenly heated.

    Season

    Stir in soy sauce and oyster sauce (if using). Sprinkle white pepper and salt; toss to coat the rice evenly.

    Finish

    Return scrambled eggs to the wok. Drizzle with sesame oil and fold in torn basil leaves. Cook 1–2 minutes until everything is well combined and heated through.

    Serve

    Taste and adjust seasoning as needed. Serve hot, optionally garnished with extra basil.
