In a large pot, heat the vegetable oil over medium heat.

Add the diced onion (base) and sauté until translucent, about 4-5 minutes.

Add the minced garlic and cook for 30 seconds until fragrant.

Toast the guajillo chiles in the pot for 1 minute, then remove seeds and stems and chop.

Stir in the chopped chiles, crushed tomatoes, and broth. Bring to a simmer.

Simmer uncovered for 15-20 minutes to develop flavors. If desired, purée a portion of the soup (about 1 cup) with an immersion blender for a thicker texture, then stir back.

Add the corn tortilla strips to the pot in the last 5 minutes so they soften and help thicken the soup.

Season with cumin, oregano, and salt. Adjust seasoning to taste.
