Brunch Entrees

  1. 1

    Make herb cream cheese

In a small bowl, mix the softened cream cheese with 2 tablespoons of chopped fresh dill (and optional chopped chives if desired) until evenly distributed. Set aside for assembly.

  2. 2

    Prepare lemon for grilling

Slice the lemon in half. Brush the cut sides with a little olive oil and set aside for grilling to release a bright, caramelized citrus aroma.

  3. 3

    Toast bagel slices

Toast the bagel slices until lightly golden and crisp. If using crostini, brush each side with olive oil and toast briefly to crispiness.

  4. 4

    Assemble lox on bagels

Spread a generous layer of herb cream cheese on each bagel half. Top evenly with smoked salmon slices.

  5. 5

    Add tomato and capers

Top each salmon layer with tomato slices. Spoon capers over the tomatoes and garnish with additional dill for fragrance.

  6. 6

    Grill lemon and finish lox

Grill the lemon halves briefly until charred and fragrant. Squeeze a little grilled lemon juice over the salmon just before serving, and drizzle with a touch of olive oil if desired.

  7. 7

    Prepare Caesar side salad

Wash and chop romaine lettuce. In a large bowl, toss romaine with Caesar dressing, croutons, and shaved parmesan until evenly coated.

  8. 8

    Plate and garnish

Arrange the smoked salmon on the bagel halves, with a side of Caesar salad. Garnish plates with extra dill and lemon wedges for a bright finish.
