Soak the glass noodles in warm water for 6-8 minutes until pliable. Drain and rinse with cold water to stop cooking. Cut into shorter lengths if desired.

Pat shrimp and chicken dry. Season lightly with salt to taste.

In same pan, cook shrimp until they turn opaque and pink, about 2-3 minutes per side depending on size. Remove and set aside.

Prepare the Thai dressing by whisking together lime juice, fish sauce, rice vinegar, palm sugar, minced garlic, and sliced red chili in a small bowl. Adjust sweetness and acidity to taste.

In a large bowl, combine the cooled noodles, cooked chicken, shrimp, sliced red onion, cucumber, cilantro, and green onions.

Pour dressing over the salad and toss to coat evenly. Drizzle with sesame oil and toss again to distribute. Taste and adjust seasoning with more lime juice or fish sauce if needed.

Garnish with crushed peanuts. Serve at room temperature or chilled.
