Meanwhile, in a skillet over medium heat, crumble and cook 8 ounces of ground breakfast sausage until browned; drain excess fat.

Sprinkle 2 tablespoons all-purpose flour over the sausage; stir to combine and cook 1–2 minutes to form a light roux.

Slowly whisk in 2 cups milk; simmer, stirring occasionally, until the gravy thickens to your desired consistency, about 3–5 minutes.
