Brunch Sides

  1. 1

    Preheat oven to 425°F (220°C).

  2. 2

In a large bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.

  3. 3

Cut in 4 tablespoons unsalted butter until the mixture resembles coarse crumbs.

  4. 4

Stir in 1 1/4 cups buttermilk until the dough just comes together.

  5. 5

Turn dough onto a lightly floured surface; pat to 1 inch thick and cut into rounds about 2–3 inches in diameter.

  6. 6

Place rounds on a baking sheet and bake for 12–15 minutes, until golden brown.

  7. 7

Meanwhile, in a skillet over medium heat, crumble and cook 8 ounces of ground breakfast sausage until browned; drain excess fat.

  8. 8

Sprinkle 2 tablespoons all-purpose flour over the sausage; stir to combine and cook 1–2 minutes to form a light roux.

  9. 9

Slowly whisk in 2 cups milk; simmer, stirring occasionally, until the gravy thickens to your desired consistency, about 3–5 minutes.

  10. 10

Stir in 1/2 teaspoon salt and 1/4 teaspoon black pepper; taste and adjust seasoning as needed.

  11. 11

Keep gravy warm and serve hot with the freshly baked biscuits.
