Method
Marinade and skewering

Prepare protein
If using chicken, trim and cut into 1-inch wide strips. If using beef, slice into thin strips suitable for skewering (1/4- to 1/2-inch thick).

Make marinade
In a large bowl whisk together soy sauce, coconut milk, peanut butter, brown sugar, lime juice, minced garlic, grated ginger, ground coriander, ground cumin, turmeric, chili flakes, and salt until smooth.

Marinate
Add chicken or beef to the marinade. Toss to coat evenly. Cover and refrigerate 1–4 hours.

Skewer
Soak wooden skewers in water for 20–30 minutes. Thread marinated chicken/beef onto skewers, 4–6 pieces per skewer.

Make peanut sauce
In a small saucepan over low heat, whisk peanut butter with coconut milk, soy sauce, water, brown sugar, minced garlic, and lime juice until smooth. Simmer 3–5 minutes, whisking often. Adjust thickness with more water if needed.

Cucumber salad

Prepare cucumber salad
In a bowl, combine sliced cucumber with rice vinegar, sugar, and salt. Toss and let sit 5–10 minutes to macerate.

Finish and garnish
Toss in chopped cilantro and sesame seeds just before serving.
