    Prep and season

    Pat the salmon fillets dry; season with salt and pepper.

    Sear salmon

    In a heavy skillet, heat olive oil over medium-high heat. Sear the salmon fillets for 3-4 minutes per side until golden and just cooked through. Remove and keep warm.

    Sauté garlic

    In the same skillet, add minced garlic and sauté until fragrant, about 30-60 seconds.

    Cook zucchini and blossoms

    Add sliced zucchini to the pan and cook 4-5 minutes until tender. Stir in zucchini blossoms and cook 1-2 minutes more.

    Deglaze

    Pour in white wine and simmer until reduced by half, scraping up any browned bits.

    Make the creamy sauce

    Stir in vegetable stock and heavy cream. Simmer until the sauce thickens slightly, about 5-7 minutes.

    Finish the sauce

    Stir in grated Parmesan and lemon juice; then whisk in butter until the sauce is glossy. Season to taste with salt and pepper.

    Combine and serve

    Return salmon to the pan briefly to warm through in the sauce. Spoon sauce over the fillets and garnish with chopped dill. Serve immediately.
