Method
Prepare dry and wet ingredients
- 1
Whisk dry ingredients
In a large bowl, whisk together the dry ingredients: flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until evenly distributed.
- 2
Whisk wet ingredients
In a separate bowl, whisk together buttermilk, egg, vanilla extract, red gel food coloring, white vinegar, and melted butter until smooth.
Make batter and rest
- 3
Pour the wet mixture into the dry ingredients and whisk gently until just combined. Lumps are okay; do not overmix.
- 4
Let the batter rest for 5-10 minutes to hydrate the flour and develop a tender crumb.
Cook pancakes
- 5
Preheat a large skillet or griddle over medium heat and lightly grease with 1 tablespoon of unsalted butter.
- 6
For each pancake, pour 1/4 cup of batter onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes until the pancake is cooked through and lightly golden.
Prepare glaze and serving
- 7
Cream cheese glaze (optional)
Beat together cream cheese, powdered sugar, vanilla extract, and milk until smooth and pourable. If too thick, add a splash more milk.
- 8
Stack warm pancakes, drizzle with the cream cheese glaze, and serve with fresh berries or a light dusting of cocoa powder if desired.
