    Prepare marinade

    In a bowl, whisk together roasted curry paste, 1 tablespoon lime juice, 1 tablespoon fish sauce, 1 teaspoon palm sugar, minced garlic, minced lemongrass, and 1 tablespoon neutral oil to form a bright, spicy marinade.

    Marinate shrimp

    Add the shrimp to the marinade and toss to coat. Let stand 15-20 minutes to absorb the flavors.

    Preheat grill

    Preheat a grill or grill pan to medium-high heat. If using skewers, thread the marinated shrimp onto skewers for easy turning.

    Grill shrimp

    Grill the shrimp 2-3 minutes per side, brushing with any remaining marinade, until pink and lightly charred. Remove from heat.

    In a large bowl, combine romaine lettuce leaves and red onion; toss to distribute evenly.
