Prepare the pork cutlets by placing them between two sheets of plastic wrap and gently pounding to about 1/4 inch (6 mm) thickness. Season lightly with salt and pepper.

Spread a light dusting of flour on a plate. Dredge each cutlet in flour, tapping off excess.

On the counter, place one sage leaf on each cutlet, then wrap each cutlet with a slice of prosciutto, securing with a toothpick.

Heat olive oil in a large skillet over medium-high heat. When shimmering, add the wrapped cutlets and sear until browned, about 2-3 minutes per side. Remove from pan and set aside.
