Method

Bar Favorites

  1. 1

Prepare the pork cutlets by placing them between two sheets of plastic wrap and gently pounding to about 1/4 inch (6 mm) thickness. Season lightly with salt and pepper.

  2. 2

Spread a light dusting of flour on a plate. Dredge each cutlet in flour, tapping off excess.

  3. 3

On the counter, place one sage leaf on each cutlet, then wrap each cutlet with a slice of prosciutto, securing with a toothpick.

Bar Favorites

  1. 4

Heat olive oil in a large skillet over medium-high heat. When shimmering, add the wrapped cutlets and sear until browned, about 2-3 minutes per side. Remove from pan and set aside.

  2. 5

Deglaze the pan with the dry white wine, scrapers up any browned bits. Cook until the liquid is reduced by about half.

  3. 6

Stir in butter and chicken stock, swirling to form a glossy sauce. Return the pork to the pan and simmer for 2-3 minutes more, spooning sauce over the tops.

  4. 7

Remove toothpicks, adjust seasoning with additional salt and pepper if needed, and finish with a squeeze of lemon juice if using. Serve immediately with the sauce spooned over.
