Prep and mise en place
Prepare the ingredients: cut the protein into bite-sized pieces, trim the green beans and cut into 2-inch pieces, mince the garlic, and thinly slice the shallot. Have all sauces measured and within reach.

Heat a wok or large skillet over high heat and add 1 tablespoon vegetable oil. Add the minced garlic and shallot; stir-fry for 20-30 seconds until fragrant. Add the Prik King curry paste and continue to stir-fry for another 20-30 seconds until the paste becomes fragrant and begins to release oil.

Add the protein to the wok. Stir-fry until it is nearly cooked through (about 2-3 minutes for chicken or pork; adjust time for other proteins). Transfer the protein to a plate and set aside.

In the same wok, add a little more oil if needed. Add the green beans and stir-fry 2-3 minutes until bright green and crisp-tender. Pour in about 60 ml of water or chicken broth, then cover briefly to steam the beans.

Return the protein to the wok. Add fish sauce, oyster sauce, palm sugar, and soy sauce. Stir to coat evenly. Cook for 1-2 minutes until the sauce slightly thickens and coats the ingredients.

Stir in the Thai basil leaves until just wilted. Taste and adjust seasoning with additional fish sauce or a squeeze of lime if desired.

Remove from heat. Serve immediately with steamed jasmine rice. Garnish with extra basil and lime wedges if desired.
