Noodle Supreme (kai Kau) Recipe

Noodles

    Place the rice noodles in warm water for 20-25 minutes until pliable, then drain well. Set aside.

    Thinly slice the chicken and beat the eggs in a small bowl. Peel and mince garlic.

Stir-fry

    Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry until just cooked through, about 3-4 minutes. Transfer to a plate.

    In the same wok, add a bit more oil if needed and pour in the eggs. Scramble until just set, then push to the side of the wok.

Noodles and flavor

    Add the remaining oil to the wok. Stir in minced garlic (and optional extra chili if using) for about 15-20 seconds until fragrant.

    Add the soaked noodles to the wok. Return the chicken and scrambled eggs to the pan.

    Pour in soy sauce, oyster sauce, sugar, and rice wine. Toss vigorously to coat the noodles and ingredients evenly and heat through for 2-3 minutes.

Finish and serve

    Add bean sprouts and sliced scallions. Drizzle with sesame oil and fold in the ground peanuts. Toss quickly to combine and retain some crunch.

    Taste and adjust seasoning with a splash more soy or sugar if needed. Serve hot, with lime wedges on the side if desired.
