Place the rice noodles in warm water for 20-25 minutes until pliable, then drain well. Set aside.

Thinly slice the chicken and beat the eggs in a small bowl. Peel and mince garlic.
Stir-fry

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry until just cooked through, about 3-4 minutes. Transfer to a plate.

Pour in soy sauce, oyster sauce, sugar, and rice wine. Toss vigorously to coat the noodles and ingredients evenly and heat through for 2-3 minutes.
Finish and serve

Add bean sprouts and sliced scallions. Drizzle with sesame oil and fold in the ground peanuts. Toss quickly to combine and retain some crunch.

Taste and adjust seasoning with a splash more soy or sugar if needed. Serve hot, with lime wedges on the side if desired.
