Prep and measure
Line up all ingredients. Grate the fresh ginger. Finely chop the red chilies. Roughly chop the roasted peanuts. Slice the green onions and chop the cilantro.

In a large skillet over medium heat, add the ground pork and cook, breaking it up with a spatula, until browned and cooked through, about 6–8 minutes.

Lower heat and add the grated ginger and chopped chilies to the pork; cook for 1–2 minutes until fragrant.

Whisk together lime juice, fish sauce, and palm sugar in a small bowl until the sugar dissolves. Pour the dressing over the pork and simmer 1–2 minutes to meld flavors.

Stir in the roasted peanuts and cook for another minute to integrate.

Remove from heat. Fold in green onions and cilantro. Taste and adjust with more lime juice or fish sauce if needed. Let rest 10 minutes for flavors to meld.

Serve the Naem Sod on lettuce leaves or with fresh vegetables as an appetizer.
