Preparation
- 1
Preheat the oven to 425°F (220°C) and line a large baking sheet with foil for easy cleanup.
- 2
In a small skillet over medium heat, warm the black beans with 0.25 teaspoon salt until steaming; keep warm.
- 3
Spread the tortilla chips in an even layer on the prepared baking sheet.
- 4
Layer half of the chips with half of the warmed beans, half of the corn, half of the jalapeño slices, and half of the pico de gallo. Scatter half of the cheese over this layer.
- 5
Repeat with the remaining ingredients: top with the remaining chips, beans, corn, jalapeños, pico de gallo, and the remaining cheese.
- 6
Bake
Bake for 8–12 minutes, or until the cheese is melted and bubbling around the edges.
- 7
Remove from the oven. Dollop or spoon guacamole in spots and drizzle sour cream over the nachos. Sprinkle chopped cilantro over the top.
- 8
Serve immediately with extra pico de gallo or salsa on the side. Optional: squeeze a little lime over the top to brighten flavors.
