Mussamum Curry - Directions

Heat oil in a heavy-bottom pot over medium heat. Add mustard seeds and let them crackle, then add curry leaves.

Add chopped onion and sauté until translucent and light golden.

Stir in minced garlic and grated ginger; cook until fragrant (about 1 minute).

Add ground coriander, cumin, turmeric, and red chili powder; toast briefly to wake up the spices.

Add cubed potatoes and toss to coat with spices; cook for 5 minutes, stirring occasionally.

Pour in coconut milk and 1/4 cup water; season with salt. Bring to a gentle simmer.

Simmer until potatoes are tender, about 15-20 minutes. Stir occasionally to prevent sticking.

Stir in roasted peanuts into the curry; reserve a little to sprinkle as garnish.
