    In a microwave-safe bowl, whisk together the glutinous rice flour (mochiko), sugar, and water until smooth and lump-free.

    Microwave on high for 1 minute, then stir vigorously with a silicone spatula.

    Return to the microwave for 1 minute more. If the dough is not yet glossy and translucent, continue microwaving in 20–30 second bursts until cooked through.

    Dust a clean surface and your hands with cornstarch. Turn the dough onto the surface and let it cool for about 5 minutes; knead gently to smooth.

    Divide dough into 12 equal portions and roll each into a smooth ball, keeping them covered to prevent drying.

    Flatten each dough portion into a small disk large enough to hold filling.
