Messy

Method

Messy

  1. 1

Bring 6 cups of water to a rolling boil in a large pot. Add 1 cup dried tapioca pearls (boba) and reduce heat to a simmer. Cook for 20–25 minutes, stirring occasionally, until pearls are plump and translucent. Remove from heat and let stand 5 minutes, then drain through a fine-mesh strainer and rinse with cold water. Set aside.

  2. 2

In a small saucepan, combine 0.5 cup water and 1 cup brown sugar. Bring to a gentle boil, then reduce to a simmer and stir until the sugar is completely dissolved and the liquid slightly thickens into a syrup, about 2–3 minutes. Remove from heat and stir in 1 teaspoon vanilla extract. Let the syrup cool slightly.

  3. 3

Divide the cooked boba pearls between two serving glasses. Drizzle about half of the brown sugar syrup over the boba in each glass to coat them, then set the glasses aside for 1–2 minutes to soak in the syrup.

  4. 4

Pour 1 cup of milk into each glass (total of 2 cups for two servings). Add 1 cup of ice to each glass and give a gentle stir to mix. If desired, drizzle a little more brown sugar syrup over the top for a sweeter, messier look.

  5. 5

Serve immediately with a wide straw. The drink is meant to be enjoyed as a messy, chewy-boba experience with syrup-coated pearls and milk.
