Pat the mahi mahi fillets dry and season on both sides with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear the mahi mahi 2-3 minutes per side until lightly browned and just cooked through. Remove and keep warm.

Add cuitlacoche and corn kernels; cook for 2-3 minutes to bloom the flavors.

Pour in white wine; simmer until reduced by half, about 2-3 minutes.

Stir in fish stock and heavy cream. Simmer gently until the sauce thickens to a creamy consistency, 4-6 minutes. Stir in lime juice and season with salt and pepper to taste.

Return mahi mahi to the pan, spoon sauce over, and cook 1-2 minutes to rewarm and coat the fish.

Spoon remaining sauce onto plates. Garnish with chopped cilantro and serve immediately.
