Prep
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Prepare potatoes
Scrub the potatoes clean and cut into evenly sized fries about 1/4 inch thick.

Soak and dry
Soak the cut fries in cold water for 15 minutes to remove excess starch, then drain and pat completely dry.

In a large bowl, whisk together olive oil, salt, paprika, garlic powder, and cornstarch until smooth.

Add the cut potatoes to the oil mixture and toss to coat evenly.

Spread the fries in a single layer on the prepared baking sheet and bake for 15 minutes.

Flip the fries and bake for another 15–20 minutes, until crisp and golden.
