1. Prep and chop

Rinse and dry potatoes. Cut potatoes into 1/2-inch cubes. Dice the onion. If using garlic, mince the garlic.

2. Brown the potatoes

Heat the olive oil in a large skillet over medium-high heat. Add the diced potatoes and a pinch of salt. Cook, stirring occasionally, until they are golden brown and crispy, about 12-15 minutes.

3. Add onion and garlic

If using garlic, add the minced garlic to the pan. Add the diced onion and cook until the onion is translucent and tender, about 5-7 minutes.

4. Season

Sprinkle paprika and black pepper over the potatoes and onions. Stir to coat. Adjust salt if needed.

5. Cook eggs

Create two shallow wells in the potato mixture and crack the eggs into the wells. Reduce heat to medium-low and cover the pan. Cook until the egg whites are set and the yolks remain runny, about 4-6 minutes.

6. Finish and serve

Sprinkle chopped parsley over the eggs. Serve immediately with crusty bread if desired.
