    Prep and preheat

    Preheat a large skillet over medium heat. Drizzle olive oil into the pan. Line a plate with paper towels and set aside. If using fresh potatoes, peel and dice them; pat dry. If using frozen home fries, skip to the next step.

    Cook the home fries

    Add the diced potatoes to the hot skillet; season with a pinch of salt. Cook undisturbed until crispy and golden on the edges, about 8-12 minutes, stirring occasionally. Remove to a plate.

    Cook sausage

    In the same skillet, crumble and cook the breakfast sausage over medium heat until browned and cooked through, about 6-8 minutes. Remove excess fat if needed.

    Sauté vegetables

    Add the onion, bell pepper, and cherry peppers to the skillet; sauté until softened and slightly caramelized, about 4-5 minutes.

    Scramble eggs

    Beat the eggs with a pinch of salt and pepper. Push the vegetables and sausage to the side, add a little oil if needed, and pour in the eggs. Scramble until just set, about 2-3 minutes. Fold in the pre-cooked home fries and continue to cook for another minute. Remove from heat.

    Prepare avocado mash

    Halve the avocados and scoop into a bowl. Mash with lime juice and a pinch of salt until creamy but still chunky. Set aside.

    Assemble the burritos

    Warm the flour tortillas in a dry skillet or microwave until pliable. Spread a generous layer of avocado mash on each tortilla. Divide the scramble mixture among tortillas, adding shredded cheddar and a spoonful of salsa borracha. Roll up each tortilla into a burrito, tucking in the sides as you go.

    Crisp and serve

    Optional: place burritos seam-side down in the hot skillet to lightly toast and seal, about 1-2 minutes per side. Slice burritos in half if desired and serve with tortilla chips and salsa on the side.

    Garnish and enjoy

    Plate with salsa for serving on the side and additional chopped peppers or cilantro if desired. Serve immediately while hot.
