Spread 1/2 tablespoon butter on one side of each of the 4 slices of sourdough.

Assemble two grilled cheese sandwiches using 8 slices of sharp cheddar, placing cheese between bread slices with the buttered sides facing outward.

Heat a large skillet over medium heat and grill the sandwiches until the bottom is golden and the cheese begins to melt, about 2-3 minutes.

Flip sandwiches and cook until the second side is golden and the cheese is fully melted. Remove from the skillet and cut each sandwich in half.

For the soup: In a separate pot, heat 1 tablespoon olive oil over medium heat. Add 1 medium onion and 2 garlic cloves; sauté until translucent, about 5 minutes.

Stir in 2 cups crushed tomatoes and 1 cup vegetable broth; bring to a simmer and cook for 8-12 minutes to develop flavor.
