Marinade prep

Prepare rub
In a small bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, smoked paprika, chili flakes, salt, and black pepper to create a fragrant steak rub.

Apply marinade
Pat the sirloin steak dry and coat it evenly with the rub. Let it rest at room temperature 15-20 minutes (or refrigerate up to 2 hours) to meld flavors.

Whisk dressing
In a small bowl, whisk lime juice, olive oil, honey (if using), salt, and pepper until emulsified.

Assemble salad
In a large serving bowl, combine greens, red onion, cucumber, cilantro, mint, parsley, and lime zest. Drizzle with dressing and toss to coat.

Add beef & spice level
Top the salad with the sliced steak. Spice level: mild uses 0.25 tsp chili flakes in the rub, medium uses 0.5 tsp, extra spicy uses 1 tsp. If you desire more heat, sprinkle additional chili flakes over the finished salad.
