Make the filling

In a mixing bowl, combine the finely chopped shrimp, softened cream cheese, minced garlic, grated ginger, and green onions.

Add beaten egg, breadcrumbs, salt, pepper, and sesame oil. Mix until the mixture is cohesive and holds together when pressed.
Prepare wrappers and zucchini

Slice the zucchini lengthwise into thin ribbons. Pat dry with paper towels to remove excess moisture.

Lay out a wonton wrapper. Place a teaspoon of filling near the bottom edge, lay a zucchini ribbon on top, and fold and seal the wrapper around the filling using a dab of beaten egg as glue. Repeat with remaining wrappers.
Cook the bundles

Fry the wrapped bundles in batches until the wrappers are golden and crisp, about 2-3 minutes per side. Remove and drain on paper towels.
Sweet and sour sauce

In a small saucepan, whisk together pineapple juice, rice vinegar, sugar, ketchup, and soy sauce. Bring to a simmer over medium heat.

Make a slurry by whisking cornstarch with water, then whisk into the simmering sauce. Cook 1-2 minutes until sauce thickens.
Serve

Arrange the golden shrimp bundles on a platter and drizzle with warm sweet and sour sauce or serve on the side for dipping.
