GF Bar Favorites

  1. 1

If using wooden skewers, soak 8-10 skewers in water for 30 minutes to prevent burning on the grill.

  2. 2

Trim excess fat from the chicken thighs and cut into 1.5-inch cubes for even grilling.

  3. 3

In a large bowl, whisk together yogurt, lemon juice, garlic, ginger, cumin, coriander, paprika, turmeric, garam masala, salt, pepper, olive oil, and chili powder until a smooth marinade forms.

  4. 4

Add chicken cubes to the marinade. Stir to coat thoroughly and ensure each piece is well-covered. Cover and refrigerate for 2 to 4 hours (or up to overnight) to tenderize and infuse flavors.

  5. 5

Thread marinated chicken cubes onto skewers (2-3 cubes per skewer) and place on a tray. Let them come to room temperature 15-20 minutes before grilling.

  6. 6

Preheat grill or grill pan to medium-high heat (about 400-425°F / 200-220°C). Brush grill grates lightly with oil to prevent sticking.

  7. 7

Grill the kabobs, turning every 2-3 minutes, until the internal temperature reaches 165°F (74°C), about 12-15 minutes. Baste with any remaining marinade during the last few minutes.

  8. 8

Remove from heat and let rest 5 minutes. Serve with cilantro, lemon wedges, and GF flatbreads or over basmati rice if desired.
