- 1
If using wooden skewers, soak 8-10 skewers in water for 30 minutes to prevent burning on the grill.
- 2
Trim excess fat from the chicken thighs and cut into 1.5-inch cubes for even grilling.
- 3
In a large bowl, whisk together yogurt, lemon juice, garlic, ginger, cumin, coriander, paprika, turmeric, garam masala, salt, pepper, olive oil, and chili powder until a smooth marinade forms.
- 4
Add chicken cubes to the marinade. Stir to coat thoroughly and ensure each piece is well-covered. Cover and refrigerate for 2 to 4 hours (or up to overnight) to tenderize and infuse flavors.
- 5
Thread marinated chicken cubes onto skewers (2-3 cubes per skewer) and place on a tray. Let them come to room temperature 15-20 minutes before grilling.
- 6
- 7
Grill the kabobs, turning every 2-3 minutes, until the internal temperature reaches 165°F (74°C), about 12-15 minutes. Baste with any remaining marinade during the last few minutes.
