    Preheat the oven to 375°F (190°C). Place the gluten-free rolls on a baking sheet and lightly toast them for 4–5 minutes until just golden. Remove and set aside.

    Prepare the portobello mushrooms: wipe clean with a damp cloth, remove the stems, and pat dry. Brush the mushroom caps with 1 tablespoon of olive oil and season with a pinch of salt and black pepper on both sides.

    In a small bowl, whisk together minced garlic, balsamic vinegar, Italian seasoning, and the remaining 1 tablespoon olive oil. Add red pepper flakes if using; this becomes the mushroom marinade.
