    Rinse romaine lettuce and spinach; pat dry. Chop romaine into bite-sized pieces and place in a large serving bowl with the spinach.

    Halve cherry tomatoes; dice cucumber, red onion, and red bell pepper. Dice avocado and set aside with the corn kernels and black olives.

    Cook chicken

    Season the grilled chicken breast with a pinch of salt and pepper. Grill or pan-sear until cooked through (internal temperature 165°F / 74°C), about 6-8 minutes per side. Dice into 1/2-inch pieces.

    If using gluten-free bread, toss 1 cup cubed GF bread with 1 teaspoon olive oil and toast in a 350°F (175°C) oven until golden, about 5-7 minutes. If using store-bought GF croutons, skip this step.
