    Prepare marinade

    In a bowl, whisk together orange juice, lime juice, olive oil, gluten-free tamari, minced garlic, jalapeño, orange zest, ground cumin, chili powder, paprika, oregano, salt, and pepper to make the marinade.

    Marinate steak

    Pat the flank steak dry. Place the steak in a large zip-top bag and pour the marinade over. Seal and refrigerate for 2–4 hours, turning once or twice. Remove steak from marinade and pat dry before cooking.

    Preheat cooking surface

    Preheat a grill or heavy skillet over high heat until hot and slightly smoky.

    Cook the carne asada

    Grill or sear the steak 4–6 minutes per side, until a desired doneness (about 130–135°F/54–57°C for medium-rare). Adjust time for thickness. Let rest briefly if needed.

    Rest and slice

    Transfer the steak to a cutting board and let it rest 5–10 minutes. Slice thinly against the grain.

    Warm tortillas

    Warm gluten-free corn tortillas on the grill or in a dry skillet for about 20–30 seconds per side until pliable.

    Assemble tacos

    Place steak slices into each tortilla. Top with onion, cilantro, radishes (optional), and salsa. Finish with a squeeze of lime juice from the wedges.

    Serve immediately with extra lime wedges on the side and extra salsa if desired.
