Make the blackening spice blend
In a small bowl, whisk together paprika, cayenne, garlic powder, onion powder, dried thyme, dried oregano, kosher salt, and black pepper to form the blackening spice blend.

Prep the shrimp
Pat the shrimp dry with paper towels and place in a large bowl.

Marinate/coat the shrimp
Drizzle the shrimp with olive oil and lemon juice. Sprinkle with half of the spice blend and toss to coat evenly.

Melt butter and coat the pan
In a large skillet over medium-high heat, melt the unsalted butter and swirl to coat the pan.

Sear the shrimp
Add the seasoned shrimp in a single layer. Sear 1–2 minutes on each side until pink and slightly charred.

Finish with remaining spice
Sprinkle the remaining spice blend over the shrimp in the pan and toss to coat. Cook for an additional 30–60 seconds to meld flavors.

Serve
Taste and adjust with a pinch more salt or lemon juice if desired. Remove from heat and serve hot, suitable as a GF bar-friendly starter or topping.
