Marinate the seafood
In a large bowl, combine minced garlic (6 cloves), freshly ground black pepper (2 tsp), sea salt (1 tsp), smoked paprika (1 tsp), crushed red pepper flakes (0.25 tsp), fresh lemon juice (2 tbsp), lemon zest (1 tsp), extra virgin olive oil (2 tbsp) and dry white wine (0.25 cup). Add the shrimp and scallops and toss to coat. Let rest 15-20 minutes to allow flavors to infuse.

Prepare the pan
Pat the marinated seafood dry lightly to remove excess moisture for better searing. Heat a large skillet over medium-high heat.

Sear the seafood
Add 1 tablespoon unsalted butter and 1 tablespoon extra virgin olive oil to the hot skillet. When shimmering, add half of the shrimp and half of the scallops. Sear 2-3 minutes on each side until just opaque. Remove to a warm plate. Repeat with remaining seafood using the remaining butter and oil.

Create the pan sauce
Pour the remaining marinade from the bowl into the skillet. Scrape up any browned bits and simmer 1-2 minutes to reduce slightly. Whisk in the remaining 1 tablespoon of butter until glossy.
