Fried Chiles
Method
Fried Chiles Directions
- 1
Rinse jalapeño peppers, pat dry, remove stems, and slice into approximately 1/4-inch thick strips.
- 2
Place all-purpose flour in a shallow dish and set aside for dredging.
- 3
Stir cornstarch into the flour to create a lighter, crisper coating.
- 4
Add garlic powder to the flour-cornstarch mixture and whisk to combine.
- 5
Whisk in ground cumin and salt until evenly distributed.
- 6
Pour vegetable oil into a deep skillet or Dutch oven and heat over medium-high heat to about 350°F (175°C).
- 7
Toss the pepper strips in the dredge to coat evenly, then carefully drop into hot oil and fry in batches until golden and crisp (about 2–3 minutes per batch). Transfer to paper towels to drain, sprinkle with a little extra salt if desired, and serve immediately with mole plate.
