Method
Prep and station

Prep calamari
Rinse the calamari and pat completely dry with paper towels to ensure a crisp coating.
Batter and dredge

Prepare dry dredge
In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, pepper, and paprika.

Prepare wet batter
In a separate bowl, whisk the egg with the beer (or sparkling water) until smooth.

Coat calamari
Dip calamari into the wet batter, then dredge in the dry mixture for a double coating.
Frying

Heat oil
Heat vegetable oil in a heavy-bottomed pot or fryer to 350-375°F (175-190°C).

Fry calamari
Fry calamari in small batches, about 2-3 minutes per batch, until golden and crisp.

Drain
Transfer fried calamari to a plate lined with paper towels to drain excess oil.
Honey sauce

Sauce base
In a small saucepan over medium heat, combine honey, rice vinegar, soy sauce, sriracha, garlic, and ginger. Bring to a gentle simmer.

Thicken sauce
Mix water with cornstarch to make a slurry; whisk into the sauce to thicken. Simmer 1-2 minutes more.

Taste and adjust heat or sweetness as desired; remove from heat.
