Make your own mole plate

    Prepare the bean base

    In a medium saucepan, loosen refried beans with 1/4 cup water and stir until smooth. Season with a pinch of salt.

    Sauté aromatics

    In a skillet, heat the oil over medium heat. Add the chopped onion and minced garlic; sauté until translucent and fragrant.

    Warm tortillas

    Warm each tortilla in a dry skillet for a few seconds on each side until pliable.

    Fill and roll tortillas

    Spread 1–2 tablespoons of the warm bean base on each tortilla, add a small amount of cheese, roll up, and place seam-side down in a shallow baking dish.

    Prepare mole drizzle (optional)

    Gently warm the mole poblano sauce with 1/2 cup water or broth until pourable. This can be used to drizzle over the plate or enchiladas instead of, or in addition to, the bean sauce.

    Assemble and melt

    Pour the remaining bean sauce over the rolled tortillas. Drizzle the warmed mole (if using) over the top and sprinkle the remaining cheese.

    Plate and garnish

    Spoon a small pool of mole sauce on each plate as a base. Top with the enchiladas, then garnish with sour cream, cilantro, onion, avocado, and sesame seeds.
