Prepare masa discs

Make masa dough and portion
In a mixing bowl, combine masa harina with warm water and salt. Mix until a smooth, pliable dough forms. Divide into 6 portions and roll each into an oval disc about 6-7 inches long and 1/4 inch thick.

Cook masa discs
Heat a dry comal or skillet over medium heat. Lightly oil if desired. Cook the discs 2-3 minutes per side until firm and pale brown; they should be pliable.
Warm beans and cheese

Warm refried beans
Gently warm the refried beans in a small pot until smooth and spreadable.

Prepare cheese
Crumble queso fresco or cotija; set aside.
Cook meat

Assemble El Huarache

Spread beans over base
Place a masa disc on a plate and spread a generous layer of warm refried beans over the surface.

Add cheese and meat
Top with crumbled cheese and the sliced meat.

Finish with toppings
Top with onion, cilantro, lettuce. Drizzle crema and salsa roja as desired. Serve with lime wedges if using.
