Prepare noodles
Soak 3 cups dried wide rice noodles in warm water for 15-20 minutes until pliable. Drain well and set aside.

Slice 1 cup red bell pepper and 1 cup yellow onion. Mince 4 cloves garlic and finely chop 2 Thai red chilies; set aside.

Cook vegetables and chili
Add bell pepper and chilies; cook 2 minutes until peppers begin to soften.

Add 2 cups shredded cooked chicken; stir-fry until heated through.

In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon fish sauce, 1 tablespoon oyster sauce, 1 tablespoon brown sugar, 2 tablespoons lime juice, and 0.5 cup water or chicken broth. Pour into the wok and simmer 2-3 minutes to blend flavors.

Add the soaked noodles to the wok; toss to coat with sauce and cook 4-5 minutes until noodles are glossy and heated through. Turn off heat and stir in 0.5 cup fresh Thai basil leaves. Garnish with 2 tablespoons crushed peanuts. Adjust seasoning if needed and serve immediately.
