Heat skillet and crisp homefries
In a large skillet over medium heat, add 1 tablespoon cooking oil. Add the homefries and season with a pinch of salt and pepper. Cook, stirring occasionally, until the potatoes are crispy and golden brown, about 8-10 minutes.

Rewarm fried chicken thigh
Push the homefries to one side and add the fried chicken thigh to the skillet. Reheat and crisp the exterior for 2-3 minutes per side. Remove and keep warm.

Prepare sausage gravy base
In a separate small saucepan (or the same skillet after removing chicken), melt butter over medium heat. Crumble the sausage patty into the pan and cook until browned. Sprinkle in flour and cook for 1 minute to form a roux. Gradually whisk in milk and simmer until the gravy thickens. Season with salt and pepper to taste, aiming for about 1/2 cup of sausage gravy.
