Prepare the marinade
In a blender or bowl, combine achiote paste, fresh orange juice, white vinegar, minced garlic, ground cumin, dried oregano, ground cinnamon, salt, and black pepper. Blend or whisk until smooth.

Marinate the pork
Place pork shoulder pieces in a large bowl or zip-top bag. Pour the marinade over the pork, turning to coat evenly. Cover and refrigerate for 2 to 4 hours.

Preheat and wrap
Preheat oven to 325°F (165°C). Lay banana leaves or heavy-duty foil on a baking sheet or roasting pan. If using banana leaves, soften by heating over a flame or in warm oven. Place marinated pork on the leaves/foil and wrap tightly to seal.

Roast the pork
Bake until pork is tender and shreds easily, about 2.5 to 3 hours. If needed, you can uncover and let some liquid evaporate for richer flavor.

Warm tortillas and prepare toppings
Warm the corn tortillas on a dry skillet or griddle until pliable. Chop cilantro; slice lime. If using optional toppings, prepare pickled onions and pico de gallo.

Assemble breakfast tacos
Place a portion of pork on each warm tortilla. Top with cilantro, a squeeze of lime, and optional toppings. Serve immediately with extra lime wedges on the side.
