Bar Favorites

  1. 1

    Prepare grill

Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

  2. 2

    Season and form patties

In a large bowl, combine ground beef with 0.5 tsp salt and 0.25 tsp black pepper. Gently mix and form four equal patties, making a slight indent in the center to prevent bulging during cooking.

  3. 3

    Make secret sauce

In a small bowl, whisk together mayonnaise, ketchup, sweet pickle relish, yellow mustard, and garlic powder to create the special sauce. Set aside in the fridge until ready to assemble.

  4. 4

    Caramelize onions

Slice the onion. In a skillet, melt butter with olive oil over medium heat. Add onions with a pinch of salt and the brown sugar. Cook slowly, stirring occasionally, until deeply caramelized and golden brown (about 15 minutes).

  5. 5

    Cook bacon

Place bacon slices on the grill or in a skillet and cook until crisp. Transfer to paper towels to drain excess fat.

  6. 6

    Toast buns

Butter the cut sides of the brioche buns and toast on the grill until golden brown.

  7. 7

    Cook patties and melt cheese

Season patties lightly with extra salt and pepper. Grill patties 3–4 minutes per side for medium, flipping once; during the last minute, place a cheddar slice on each patty to melt.

  8. 8

    Assemble burgers

Spread the secret sauce on the bottom bun. Layer with romaine, tomato slices, and pickle slices. Add the cheddar-melted patty, then a portion of caramelized onions and crispy bacon. Cap with the top bun and serve immediately.
