Method
If using dried chow mein noodles, cook in boiling salted water according to package instructions until just tender. Drain, rinse briefly with cold water, and set aside.
In a bowl, whisk together 1 tablespoon soy sauce, 1 teaspoon sesame oil, and 1 tablespoon cornstarch. Add chicken strips and toss to coat. Let sit for 5-10 minutes.
Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry until browned and cooked through, about 4-6 minutes. Remove and set aside.
In the same pan, add another 1 tablespoon oil. Add minced garlic and ginger; sauté 30 seconds until fragrant.
Return noodles and bean sprouts to the pan. Add remaining 2 tablespoons soy sauce and oyster sauce; pour in 60 ml water and toss to combine.
If a thicker sauce is desired, whisk 1 tablespoon cornstarch with 2-3 tablespoons water to make a slurry and stir into the pan; cook 1-2 minutes until glossy.
Remove from heat, drizzle with sesame oil, toss to combine, and adjust seasoning. Garnish with optional green onions if desired. Serve hot.
