Prepare chocolate
Measure and finely chop the Mexican chocolate tablea (about 1 cup when chopped) to help it melt quickly.

Melt chocolate into a smooth paste
In a small saucepan, combine the chopped chocolate and water. Warm over low heat, whisking until the chocolate fully melts and forms a smooth paste.

Heat milk with aromatics
In a separate pot, heat the milk with the granulated sugar, ground cinnamon, vanilla extract, salt, and optional ancho chili powder until just steaming (do not boil).

Combine and whip
Pour the melted chocolate paste into the warm milk and whisk vigorously with a molinillo (or a whisk) until the mixture is smooth, emulsified, and foamy.
