Method

Late Night

  1. 1

    Prep and season chicken

Pat the chicken breasts dry and pound to an even thickness about 1/2 inch. Season generously on both sides with salt, black pepper, and garlic powder.

  2. 2

    Set up dredging stations

Place flour in a shallow dish. Beat eggs in a separate dish. In a third dish, mix breadcrumbs with grated parmesan until evenly combined.

  3. 3

    Dredge the chicken

Dredge each chicken piece in flour, tapping off excess. Dip into the beaten eggs, then press into the breadcrumb–parmesan mixture until well coated on all sides.

  4. 4

    Fry the chicken

Heat olive oil in a large skillet over medium-high heat. Add breaded chicken and cook 3–4 minutes per side, until golden brown and cooked through. Transfer to a plate lined with paper towels.

  5. 5

    Make marinara sauce

In the same skillet, add minced garlic and sauté for about 30 seconds. Pour in marinara sauce and simmer 2–3 minutes to let flavors meld. If the skillet is dry, add a splash of pasta water or a pinch of salt.

  6. 6

    Melt cheese and finish

Return the chicken to the sauce. Top each piece with shredded mozzarella and a light sprinkle of extra parmesan. Cover and cook 2–5 minutes until cheese is melted and bubbling.

  7. 7

    Cook pasta

Meanwhile, bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8–10 minutes. Reserve 1/4 cup of the pasta water before draining.

  8. 8

    Plate and garnish

Toss a portion of the cooked pasta with a little sauce, or simply plate the pasta alongside the chicken. Garnish with fresh basil leaves and spoon extra sauce over the dish. Serve immediately.
