Make filling
In a skillet, heat 1 tablespoon vegetable oil over medium heat. Add finely chopped onion and minced garlic; sauté until translucent and fragrant, about 3-4 minutes. Stir in shredded chicken, cumin, chili powder, paprika, salt (filling) 0.25 tsp, and black pepper 0.25 tsp; cook until heated through and flavors meld. Remove from heat and fold in 1 cup shredded cheese (filling) until melted.

Assemble flautas
Place about 1-2 tablespoons of filling on the bottom third of each tortilla. Roll tightly and secure with a toothpick if needed.

Fry flautas
In a wide, deep skillet, heat 3 cups of oil to 350°F (175°C). Fry the rolled tortillas in batches, turning once, until golden and crisp, about 2-3 minutes per side. Drain on paper towels.

Plate and finish
Remove toothpicks. Arrange flautas on a platter. Top with guacamole, spoonfuls of sour cream, and a sprinkle of remaining shredded cheese (topping). Garnish with cilantro if desired. Serve with lime wedges.
