Method

Marinate Carne Asada

    Prepare marinade

    In a large bowl, whisk together lime juice, orange juice, minced garlic, chopped cilantro, minced jalapeño, ground cumin, dried oregano, olive oil, salt, and black pepper.

    Marinate steak

    Add the flank or skirt steak to the marinade, toss to coat, cover, and refrigerate for at least 2 hours (up to 12 hours) to develop flavor.

Roast Poblanos and Corn

    Char and peel poblanos

    Place poblano peppers over an open flame or under the broiler until the skins blister and char. Transfer to a bowl, cover to steam, then peel, seed, and slice into strips.

    Roast corn

    Toss roasted corn kernels with a splash of olive oil and a pinch of salt. Grill or char in a skillet until lightly caramelized and smoky.

Pickled Slaw

    Make slaw base

    In a large bowl, combine shredded red cabbage, carrot, and red onion.

    Pickling dressing

    Whisk white vinegar, sugar, salt, and lime juice in a small bowl. Pour over the slaw and toss to coat. Refrigerate at least 15 minutes before serving.

Salsa Borracha

    Simmer salsa base

    In a saucepan, simmer chopped tomatoes, onion, garlic, and chipotle peppers in adobo with beer for 15-20 minutes.

    Finish salsa

    Stir in chopped cilantro and salt. Optional: blend to your preferred texture and drizzle with a little olive oil before serving.

Crispy Tortilla Shells

    Fry tortillas

    Heat vegetable oil in a wide skillet or fryer to about 350°F (175°C). Fry one tortilla at a time until crisp and lightly browned, about 30-45 seconds per side. Drain on paper towels and sprinkle with a pinch of salt.

Cook Carne Asada

    Sear steak

    Remove steak from marinade and pat dry. Grill or sear over high heat to your preferred doneness (target about 135°F/57°C for medium-rare). Let rest 5-10 minutes, then slice thinly against the grain.

Assemble Tacos

    Warm tortillas and build

    Reheat the crispy tortilla shells or warm them briefly. Layer with sliced carne asada, roasted poblano strips, and roasted corn. Top with pickled slaw and spoon salsa borracha over the top.

    Garnish and serve

    Garnish with fresh cilantro leaves and a squeeze of lime. Serve with tortilla chips on the side.
